
Versatile tomato sauce
This sauce can be used in a variety of ways and is a great way to use up vegetables that are getting soft or wilting. Try adding vegetables like carrot (finely chopped) or courgette.

Ingredients
2 x onions, chopped
6 garlic cloves, chopped
2 tins of tomatoes
1 teaspoon sugar
Tomatoes/red peppers or any other vegetable that may be past their best, chopped
Method
Fry onions for 4-5 minutes, stirring regularly to avoid burning.
Add chopped garlic cloves and continue to fry for 2 minutes.
Add tinned tomatoes and chopped tomatoes and/or red peppers and any other vegetables you are using.
Continue to simmer to reduce volume by one third (could take 10 minutes).
Once cooked, liquidise until smooth.
To serve
Ideal to serve with pasta or on top of a baked potato with some grated cheese.
Optional ingredients to add to dish:
- Roasted vegetables e.g. aubergine, courgettes (vegan)
- Sausages/chorizo
- Grilled rashers or cooked ham
- Cooked chicken (or any leftover cooked meat)
- A tin of tuna or salmon
