
Pantry & Freezer Ingredient Bean Chilli
A hearty and budget-friendly bean and vegetable chilli made with simple, low-cost ingredients like canned beans, tomatoes and frozen vegetables. It’s packed with protein and flavor, making it a filling and nutritious meal. Perfect for batch cooking!

Ingredients
x2 cans of mixed beans
x1 can chopped tomato
x1 can sweetcorn
1-2 cups of frozen mixed vegetables
1 tbsp tomato paste
1tsp chili powder
1tsp paprika
1tsp cumin
Salt & Pepper
1tbsp vegetable oil (olive, rapeseed, sunflower)
1 beef / vegetable stock cube (dissolved in 250mls water)
Method
- Heat the oil in a pot on medium heat.
- Add the frozen vegetables and cook for a few minutes. Stir in chilli powder, paprika, cumin, salt and pepper.
- Pour in beans (drained), chopped tomatoes, sweetcorn, tomato paste and stock (250mls).
- Let it all simmer for 20-30 minutes, stirring occasionally until thick and heated through.
- Add more seasoning to taste if desired i.e. extra chilli powder for a spicy kick!
- Serve with rice, pasta or bread for a super low-cost filling meal.
