
Hidden Veggie Pasta Sauce
This veggie-based pasta sauce is loaded with hidden vegetables and cream cheese for a creamy, flavourful, and nutritious vegetable sauce the entire family will love! A very simple, quick, fuss free meal – perfect when catering for more picky eaters in your life (small and big!).

Ingredients
- 150g red bell pepper, chopped
- 300g tomatoes, chopped
- 200g courgette, chopped
- 1 small/medium white onion, chopped
- 2 cloves of garlic, minced
- ½ tsp Italian spice mix
- Salt & black pepper to taste
- 150g cream cheese (chose vegan alternative, if needed)
- 120mls vegetable broth made up using low salt vegetable stock cubes
- 200g uncooked pasta (select gluten-free, if needed)
- To serve: Chopped basil (optional)
Method
- Preheat the oven to 200 °C and grease a medium baking dish with a little bit of oil.
- Add the tomatoes, red bell pepper, courgette, onion, garlic, Italian spice mix, salt, and black pepper to the dish.
- Stir to combine.
- Add the cream cheese and pour in the vegetable broth.
- Bake for 20-22 minutes, or until the cream cheese is starting to turn golden.
- Meanwhile, cook pasta according to package directions, then drain most of the pasta water, but keep a small amount.
- Remove the baking dish from the oven and blend the veggies using a hand blender or regular blender.
- Add the cooked pasta to the veggie sauce and stir to combine.
- Serve in bowls, garnish with chopped basil and enjoy!
