
Overnight oats with berries
This recipe made with porridge oats is eaten cold and a fantastic one to make the night before as a quick nutritious breakfast. Also works as a healthy snack.

Ingredients
100g (1 cup) porridge oats
125ml (1⁄2 cup) apple juice
1 small apple or pear
1 dessertspoon flaked almonds or any nuts or seeds
150-200g of natural or flavoured yoghurt
Berries (e.g. blueberries, strawberries, raspberries) to serve
Sprinkle of cinnamon (optional)
Method
Grate or chop the apple/pear into small pieces
Mix the apple/pear pieces, oats, apple juice, 1⁄2 of the yoghurt and cinnamon (if using) in a bowl.
Cover with cling film and leave it a fridge for at least 1 hour (or overnight).
Before serving, stir in the nuts/seeds and stir in the rest of the yoghurt.
Top with the mixed berries.
